The Trappist Abbey of Notre Dame de Saint-Remy, founded in 1230. On the nose, you can detect notes of mocha and caramel, along with herbal yeast aromas (clove, black pepper).
On the palate, you may taste biscuits, caramel, and pear—beautifully balanced with a lightly roasted bitterness and a hint of clove. In the finish, the bubbles unfold and culminate in an elegant, dry aftertaste. All proceeds from Trappist beers are donated to charity.
